Makes 3 Servings (each serving counts as 1 protein)
- 2 5-ounce cans tuna, drained
- 2 eggs
- 1/4 cup celery, chopped
- 1/4 cup onion, chopped
- 1/4 cup green or red pepper, minced
- Salt and pepper, to taste
- Mix all ingredients in bowl and spoon into 6 greased muffin cups. Bake at 350º for 30 minutes until puffed and lightly browned around the edges. Two muffins per serving.
