Tuna Muffins

Makes 3 Servings (each serving counts as 1 protein)

Calories per serving: 155


  • 2 5-ounce cans tuna, drained
  • 2 eggs
  • 1/4 cup celery, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup green or red pepper, minced
  • Salt and pepper, to taste


  • Mix all ingredients in bowl and spoon into 6 greased muffin cups. Bake at 350º for 30 minutes until puffed and lightly browned around the edges. Two muffins per serving.
