
Beef Gravy

Total Time: 40 minutes
This makes 8 1/2 cup servings at 17 calories a half cup.
Ingredients
- 4 cups stock- beef, chicken, vegetable
- 1 onion , chopped thin
- 1 cup mushrooms, sliced
- 1 clove of garlic, pressed
- 1 teaspoon tomato paste
- Bay Leaf
- Salt (to taste)
- Pepper (to taste)
- a pinch of thyme
- 1 teaspoon Xanthan Gum
Instructions
- In a stock pot bring to boil all ingredients until onions are soft
- Sprinkle the Xanthan gum in boiling liquid and whisk until thickened
- Simmer for 20 minutes
Notes
I like to simmer it for at least an hour, but it’s ready to go after 20 min It will be clearer/ more translucent than traditional flour thickened gravy but the flavour and texture is there
